How to prepare delicious coffee with a machine?

Coffee grinding

A fairly fine coarseness, similar to fine sand, should be determined. The finer the coffee, the harder it is for the water to pass through, and the greater the pressure. Therefore, finely ground coffee will result in a richer, thicker drink and crema. However, it is important not to overdo it, because too finely ground coffee can clog the filter for the coffee to escape.

Relationship with water

When preparing quality coffee espresso, the ratio 1:2 is usually applied, that is, the goal is to make twice as much coffee drink as was used. For example, using 15g of coffee, an espresso cup should contain about 30g of drink. And here is the traditional single shot espresso recipe: 7 grams of coffee and 30ml of drink.

Amount of coffee

With a manual machine, that is, one with a portafilter, you have more freedom to create the coffee recipe that tastes best to you. The important thing here is to know how big your portafilter basket is. You will know that you have put in too much coffee when it will be difficult to fit the portafilter tightly to the machine. In this case, water may begin to seep through the sides. The amount of coffee in a single espresso will vary between 7-10g depending on the basket used, while a double can range from around 14 to 20g.

Coffee "run" time

Adjust the contact time of the coffee with the water so that you get the desired amount of drink in the cup. A typical coffee should be in the espresso cup in 18-25 seconds, but we have tasted delicious espressos that ran as long as 40 seconds!

Water pressure

When adjusting the above-mentioned parameters, pay attention to whether sufficient water pressure is generated. It should reach about 8-10 bars. If the coffee is pressed too hard, it will be slow and bitter, and if the pressure is too low, the crema will not form and the concentrated flavor nuances characteristic of espresso will not develop.

Water temperature

In devices, the water temperature can usually vary only within a certain interval. We recommend starting with 93-95 degree water. If, after adjusting other parameters, you still want to reduce the acidity of the coffee, you want a bitter, stronger cup, raise the temperature to 96 or 97 degrees. And for a fruitier cup, you can lower the temperature a bit.

Water composition
